Baked Hushpuppies
1 c yellow cornmeal (not mix or self-rise)
1 c all-purpose flour
1 Tbs baking powder
1 tsp sugar
1/8 tsp ground red pepper
3/4 c fat-free milk
1/2 c finely chopped onion
1/4 c vegetable oil
2 lg eggs, lightly beaten
cooking spray
1. Preheat oven to 425.
2. Combine cornmeal, flour, baking powder, sugar, salt and red pepper in a
large bowl; stir well, and make a well in center of mixture. Combine milk
and next 3 ingredients; stir well. Add milk mixture to flour mixture, stirring
just until moist.
3. Spoon about 1 Tbs batter into each of 36 miniature muffin cups coated
with cooking spray (cups will be about 3/4 full).
4. Bake at 425 for 15 minutes or until done. Remove from pans, and serve
immediately.
Serving = 1 hushpuppy
