Cajun Corn & Okra Saute

1 tsp         canola oil
1/2 c         chopped onion
2 c            fresh or frozen cut okra
                 thawed
1 tsp        Cajun seasoning
1               medium tomato
2 Tbs       chopped fresh parsely

1. Heat the oil in a large nonstick skillet over medium-high heat.  
Add the onion and cook, stirring occasionally, until golden, about 3
minutes.
2. Add the okra, corn, and Cajun seasoning; cook, stirring
frequently, until the corn and okra are crisp-tender, about 5
minutes.
3. Remove the skillet form the heat; stir in the tomato and parsley.

Serving = 3/4 cup
Points per serving = 1
Servings = 6
