Chicken-Spinach Stir-Fry

1 lb        boneless skinless chicken
                 breast halves
3 Tbs     soy sauce
2 tsp      minced fresh ginger
3 lg        cloves of minced garlic
1/2 tsp    salt
1/2 tsp    black pepper
10 oz      fresh spinach
4 tsp      canola oil or other healthy oil

Cut chicken into very thin strips.
In a small bowl, mix chicken, soy sauce, ginger, garlic, salt and
pepper.  Heat wide cast-iron skillet or wok over high heat. Add oil,
and heat until it shimmers.  Add chicken, and cook till done.  Add
spinach and stir a minute more.  Serve over brown rice.  (Count
POINTS for the rice.)

Serving = 1/4 of recipe
