Chocolate Eclairs

> 72 regular saltine crackers
> 3 cups skim milk
> 2 small boxes instant sugar-free vanilla pudding mix
> 8 oz tub of fat-free whipped topping
> 8 oz jar fat-free hot fudge sauce
>
> Mix milk and pudding according to package directions; fold in
whipped topping. Lay 24 crackers in a 9 x 13" pan. Spread 1/2 of
pudding mixture over the top. Layer another 24 crackers on top of
pudding mixture and then spread remaining pudding mixture on
top. Top with another 24 crackers. Cover top layer with fat-free
fudge sauce. Refrigerate overnight if possible.
