CORN & BLACK BEAN SALSA
- A Core Recipe -

1 can                 black beans, rinsed and drained
(15 oz)
1 cup                 frozen corn kernels, thawed
1/2 cup              chopped red bell pepper
1/2 cup              chopped fresh cilantro
8                        green onions, thinly sliced
3 Tbs                 lime juice
2 Tbs                 balsamic vinegar
1/2 tsp               ground cumin
1/4 tsp               salt

Combine all ingredients.  Serve immediately, or cover and chill 30
minutes.  Store in refrigerator up to 3 days in an airtight container.  Serve
with baked tortilla chips, if desired.  

Serving = 1/4 cup
