Cream Cheese Biscuits

2 c                self-rising flour
1 tsp             sugar
1/2 c             block-style 1/3 less fat cream cheese,  cut in small        
                                 pieces
2 Tbs            light stick butter
1/4 c             fat-free milk
+ 3 Tbs
              Cooking spray

1.  Preheat oven to 450
2.  Sprinkle 1 tablespoon flour over work surface. Combine
remaining flour and sugar in a bowl; stir well. Cut in cheese and
butter with a pastry blender until mixture resembles coarse meal.  
Add milk, stirring just until dry ingredients are moistened.
3.  Turn dough out onto work surface.  Knead 4 or 5 times. Pat
dough to 1/2 inch thickness; cut with a 2-inch biscuit cutter. Place
rounds on a baking sheet coated with cooking spray.  
4.  Bake at 450 for 10 minutes or until lightly browned.

Serving = 1 biscuit
