JAMBALAYA
3/4 c diced green bell pepper
1 2/3 c water
1 1/3 c instant brown rice
1 can diced tomatoes w/
14.5 oz green bell pepper,
celery, & onion (such
as Hunt's)
1 3/4 c extra lean, low-sodium
diced ham
1 tsp Old Bay seasoning
cooking spray
Heat a large nonstick skillet coated with cooking spray over medium-high
heat. Add green bell pepper; saute 4 minutes or until lightly browned.
Stir in water and remaining ingredients; bring to a boil. Cover, reduce
heat, and simmer 5 minutes. Remove from heat, and let stand 5 minutes.
Serving = 1 cup
Points per serving = 4
