Peach Ice Cream

5 c             chopped peeled peaches
                  divided
2/3 c          sugar
1 Tbs         lemon juice
2 c             2% milk
1/2 c          egg substitute
2 Tbs         honey
1/8 tsp       almond extract
            optional mint sprigs

1. Mash 4 cups peaches in a large bowl. Add sugar and lemon
juice; stir well. Let stand 30 minutes, stirring occasionally. Add
milk, egg substitute, honey, and extract; beat at medium
speed of a mixer until well blended. Stir in remaining 1 cup
peaches.
2. Pour mixture into freezer can of an ice cream freezer; freeze
according to manufacturer's instructions. Spoon ice cream into
a freezer-safe container; cover and freeze 1 hour or until firm.
Garnish with mint sprigs, if desired.

Serving = 1/2 cup
