Summertime Roast Beef Subs

1 1/4 c        fresh corn kernels or frozen  
                    whole-kernel corn, thawed    
1/3 c          diced red bell pepper
1/4 c          diced red onion
1/4 c          light Caesar dressing
4 (3 oz)      submarine rolls        
4                red leaf lettuce leaves
8                slices tomato
                         (1/4 inch thick)
8 (1 oz)      slices lean cooked roast beef

1. Combine first 4 ingredients in a bowl; stir well, and set aside.
2. Cut a 1/4 inch thick slice off top of each roll; set tops aside.
Hollow out centers of rolls, leaving 1/2 inch thick shells;
reserve torn bread for another use. Place 1 lettuce leaf in
bottom half of each roll. Spoon corn mixture evenly over
lettuce; top each serving with 2 slices tomato and 2 slices
roast beef. Cover with roll tops.

Serving = 1 sandwich
