Southwestern Chicken Hash

4 c        southern-style hash browns
1/2 c     frozen chopped onion
2 1/3 c  chopped cooked chicken breast
1 can    (15 oz)Mexican-style stewed  tomatoes, undrained
1/2 tsp   ground cumin
1/4 tsp   salt       
         vegetable cooking spray

1. Coat a large nonstick skillet with cooking spray; place over
medium-high heat until hot. Add potatoes and onion; cook 10
minutes or until browned, stirring often.
2. Add chicken and remaining ingredients to skillet; cook 5
minutes or until thoroughly heated, stirring often.

Serving = 1/4 of recipe
