Tomato, Basil, and Smoked Mozarella Pasta Salad

8 oz        uncooked fusilli (or other spiral pasta)
1 Tbs      balsamic vinegar (more to taste)
2 tsp       olive oil
1/2 tsp        dried oregano
1 c          cherry or grape tomatoes - halved
1/2 c       basil, fresh chopped
1/2 c       part-skim mozzarella cheese
               smoked & diced
1/8 tsp     table salt (or to taste)
1/8 tsp     black pepper (or to taste)

1. Cook pasta according to package directions without added salt
or fat; drain and transfer to a larger bowl. Add vinegar, oil and
oregano; toss to coat.
2. Fold in tomatoes , basil and mozzarella; season to taste with
salt and pepper. Serve warm or chilled.

Serving = 1 cup
Points Per Serving = 4
Servings = 6

NOTE
For an interesting flavor boost, add sun-dried tomatoes. Place
1/4 cup of sun-dried tomatoes in a bowl and cover with boiling
water; set aside for 10 minutes . Drain well and substititute them
for half the tomatoes in the recipe.
