TURTLE CUPCAKES

1  (1 lb 4.5 oz) pkg low-fat fudge brownie mix
1/4 cup finely chopped pecans
Cooking Spray
1/3 cup fat-free caramel-flavored ice cream
topping (such as Smucker's)

1. Preheat oven to 350 degrees.
2. Prepare brownie batter according to pkg directions - stir in pecans.
3. Place paper baking cups in muffin pans, and coat with cooking spray.  
Divide half of batter evenly among baking cups.  Spoon 1 teaspoon
caramel topping into center of each cupcake.  In each cup drop 1
teaspoon batter from tip of a spoon, guiding the dripping batter around
the outside edge of caramel topping.   Top evenly with remaining batter.  
Bake at 350 degrees for 25 min.  Remove cupcakes from pans and let
cool completely on wire racks.  
Yield = 16 servings
Serving =  1 cupcake
Points = 4 per serving
